Our Dough

Once upon a time, someone discovered that if you left a simple mix of flour and water alone, it would bubble to life. This natural magic—the ‘mother culture’—was the beginning of sourdough. At Mamma Dough, we carry on this tradition with pride.

Our Mamma Dough, with roots tracing back two centuries to Lapland, has been passed down from baker to baker, evolving with each new location. Fed daily with organic rye, wholemeal, and white flour milled in the UK, and fermented for 48 hours. This process results in dough with a distinct flavour, airy texture, and incredible lightness.

Our “Mamma” is treated like royalty in a secret location in South West London. Guarded and fed daily by our dough master, she ensures every batch of sourdough is the best in London (even if we do say so ourselves).
